I love leftovers. Mainly because my solution to leftover food of any kind is to find someway of frying it. And the Chickpea Broccoli Casserole is perfect for reinventing itself and becoming the most luscious little crispy patties of salty goodness ever! Don’t tell anyone, but I like these Croquettes better than the original casserole. I mean, come on! They’re fried!
Ingredients:
left over Chickpea and Broccoli Casserole
flour
vegetable oil
*Super easy. Press small handfuls of the leftover casserole into small patties, dredge them in flour and fry them for a few minutes on each side in a bit of oil in the frying pan until they are golden and crispy. Sprinkle with salt and pepper and enjoy!
*Also, if you have leftover mashed potatoes you can mix the mashed potatoes with the leftover casserole and make the mixture into patties and fry them up the same way. Sigh. So good.
